Three Reasons to Grill

In South Florida we are privileged enough to be able to grill year-round. However, we seem to not take advantage (you know who you are). We have heard it all, "its too hot" to "its too messy"!

So now that summer is approaching and our neighbors to the north are dusting off their Colemans, its time that we brush up on our grilling recipes!

Their fast, their fearless and most of all, their easy....



Cuban Grilled Corn

Ingredients
4 ears of corn (husks peeled back, silk removed)
2 tbsp. melted butter
1/4 cup grated asiago cheese
1 tsp. paprika
salt
lime


Char-grill corn over medium heat, about 12 minutes. Brush with butter; sprinkle with cheese, paprika, and salt to taste. Serve with lime.



Grilled Stone Fruit

Ingredients
4 peaches or plums, halved
1 tbsp. extra virgin olive oil

Brush fruit with oil. Grill until marks appear (2 to 3 min).
For Dessert, top with yogurt and granola.





Chicken Pesto Packets

Ingredients
4 boneless chicken breasts
1 cup pesto
2 zucchini (thinly sliced)
4 plum tomatoes chopped
8 shallots trimmed

Lay one piece of chicken on 12-inch long sheet of foil. Top with 1 tbsp. of pesto and drizzle with 1 tsp. of olive oil. Mound the zucchini, shallots and tomatoes on top of the breast and add a dollop of pesto. Pinch the edges of the foil tight and grill of 25 min.
