It's hard to believe that it is Father's Day already! Our team has been so busy, its seems as if Summer just began.
In observance of Father’s Day, we thought we would take a look at a dish that has outlasted generations. Constantly re-inventing itself (however staying true to its roots) Bruschetta is a classic that at no matter what age, we will never grow out of.
Outlasting the Generations: The Evolution of Bruschetta
The Original Grandfather… “Oldie but Goodie”

The “grandfather bruschetta” dates back to 15th century Tuscany. Often called fettunta meaning "oiled slice", many believe that Italians started making the dish to salvage bread that was going stale by adding oil and seasonings. The earliest and simplest of recipes consists of grilled bread rubbed with garlic and topped with olive oil, salt and pepper. Later, tomatoes and other vegetables were added to enhance flavor and add acidity.
The 2nd Generation… “Like Father, Like Son”
In the late 1980’s Bruschetta (as we know it today) began popping up on restaurant menus across the United States. This second generation version is often served family style as an hors d'oeuvre . Menu variations range from classic tomato and basil to adding cured meats, olives and cheese.
Generation Why-not...“Does the Apple fall far from the tree?”
Our team at AARON’S CATERING always respects the classics (our elders so to speak). However, we have re-invented the Bruschetta once again. Using molecular gastronomy to alter the texture—but not the taste—of the individual components, our take on Bruschetta is sure to stir things up a bit. Though the balsamic vinegar has been transformed into caviar beads and the basil has been deconstructed into a powder, the taste is as classic as 15th century Tuscany.
Cheers to all of the Fathers out there!
