SEAN AND SARAH: BBQ Couture

Wedding season is well underway and our team could not have been more excited to aid the ladies from Anje Soirees in the wedding of Sean and Sarah last week. Kansas City natives, the couple meant business when it came to the affair's menu. Bold cuts of meat, strong flavors, and a special BBQ sauce rounded out the menu for the 200 guests. 

"It all started with Gates Original," says Chef Brian Aaron who had the couples signature sauce flown in from Kansas City. "Once I was able to experiment with the unique flavor combinations in the sauce I better understood the couple."

Aaron, who explained that he wanted to give the couple a "taste of home" all-the-while incorporating Latin undertones so true to Miami rolled out the below menu. 





PASSED HORS D`OEUVRES 

 

Mozzarella Tomatoes “Caprese” 

hand picked cherry tomatoes, fresh buffalo mozzarella rounds,speared with fresh basil in our 

famous pippettes filled with extra virgin olive oil balsamic vinaigrette cracked black pepper 

and crushed sea salt 

 

“Cubanitos” 

a gourmet smaller version of our original Cuban sandwich 


Caviar, Shrimp, Prosciutto CanapĂ© Trio 

variety of cheese spreads served in a filo cup topped with caviar, shrimp, or prosciutto 


Caribbean Crab Cake 

served with a Caribbean sauce and topped with an avocado salad 


Jerk Chicken Neopolitan 

jerk chicken in a circle of crispy plantain and topped with a spicy mango chutney and bbq 

sauce caviar 


Tomato Shooters 

green, red, and yellow tomato shooters paired with mini gourmet grilled cheese sandwiches 


Macaroni & Cheese Lollipops 

 deep fried macaroni & cheese lollipops with gourmet cheese sauce 


BBQ Braised Short Ribs 

bedded on polenta and  topped with mozzarella cheese

field greens brushed up with extra virgin olive oil and fresh herbs

 over puffed pastry served with a cream anglaise

strawberries dipped in milk chocolate 


MID-NIGHT SNACKS 

Mini Home Run Sliders 

aarons famous homemade burgers with freshly baked buns 


Mini Philly Cheesesteak Hoagies 

 

Corn Dog Lollipops 

 hot dog bites wrapped in cornmeal & served as a lollipop
